Quick and easy spicy tuna


This week has been really busy, like I left the house at 7am and just got home at 6:30pm, kind of busy.  When I know I am going to have one of those weeks I always plan to make spicy tuna.


Spicy tuna is an adaptation of a recipe that I have long forgotten. So if you are reading this realizing you know where I found it, please share!

If you love spicy food and anything Bobby Flay, you probably have jalapenos and chioptle peppers in adobo sauce just lying around in your pantry waiting for a day like today.
Ingredients:
2 cans of tuna (5oz/each)
1 jalapeno finely chopped
2 or more chipotle peppers in adobo sauce finely chopped (depending on how hot you like it)
 "a few" tablespoons of mayonnaise,  making tuna is a personal venture, I like mine with less mayo you can put as much as you like
English Muffins, or some good crusty bread, today I used Multigrain English muffins and they were amazing
1/2 cup grated cheese, Parmesan or mozzarella, I use Pecorino Ramano of course

If you use a whole English muffin, this will make 2 HEALTHY portions. Usually we have a little tuna left over that goes great with pita chips for my lunch the next day.

So mix your tuna, mayo, chipotles and jalapenos in a bowl and grate your cheese. Pile the tuna on each half of the English muffin and top if off with the cheese.

If you have a toaster oven broil your tuna for about 5-7 minutes at 450 degrees. If you are using a conventional oven your broiler is probably set to 500 degrees so keep an eye on it. You just want to heat it through and get a good browning on the cheese.


I had some extra tomatoes so I sliced them up and put them on top after the tuna broiled, you could also put them under the cheese before you cook.

Get creative, even on a night when you are tired and hungry you can still eat something tasty. Thanks for stopping buy and happy eating!
