Lactose Free Nachos


You can't go wrong with Nachos


Tonight, when it was time for dinner, I looked in the refrigerator and the only thing thawed was spicy Italian sausage. The husband was eating his favorite snack of chips and salsa and I thought... let's make nachos.


Ingredients
tortilla chips
1 jalapeno seeded and sliced
3 links spicey Italian sausage
1 can artichokes drained and halved 
1 cup grated Pecerino Ramano cheese
1/2 cup Feta crumbled

Dipping: Salsa, 1/2 cup Greek yogurt, juice of 1 lime

This was about 2 servings.

Preheat oven to 450 degrees. Brown sausage in a non-stick skillet. When the sausage is cooked through remove from heat and add artichokes.

Lay chips in a single layer on a cookie sheet, top with sausage and artichoke mixture, add jalapeno, and cheese. Bake from 6-8 minutes or until cheese is melted and chips start to brown.

While the nachos are baking combine 1/2 Greek yogurt and lime juice in a small bowl. This is my substitute for sour cream and I put it on all kind of things.
